Although I embrace winter with outdoor activities like skiing and snowshoeing, I have to say, not having fresh produce of my own, at my disposal during winter gets to me. One way to combat that is utilizing fresh herbs to spruce up the winter fare.

Placed in a nice sunny window, you can enjoy the fresh taste of rosemary in your favorite dishes all year. Rosemary potatoes, sweet potato baked fries with rosemary, as well as an array of chicken and lamb dishes. Yum! Possibilities for great flavor are endless when you have fresh herbs at your disposal all winter! The Trailing Rosemary, in the picture, was grown outside in containers during summer, and then was brought inside for the winter. I find it to be one of the best herbs to make it through the winter here, when the quality and quantity of our light is very poor in our homes. I enjoyed the added pleasure of having this one bloom profusely this winter, just when the weather seemed at its most bleak.
Next time you get your hands on some fresh rosemary try this simple quick dish, full of flavor and good for you vitamins and minerals.
Peel and cut sweet potatoes into French fry style pieces, and drizzle with olive oil. Sprinkle with kosher or sea salt, fresh ground pepper, and a generous amount of fresh chopped rosemary. Toss until they are completely coated with oil and spices before sliding onto a cookie sheet lined with parchment paper, and bake 20-30 minutes at 400. Great addition to any meal!
